What could be more better than hot soup while it’s raining outside. Today’s recipe is Barley soup. Perfect and healthy for everyone 🙂
1/3 cup barley soaked for 2-3 hours
1/4 cup carrot slices
1/4 cup capsicum thin Julienne
1/4 cup cabbage thin Julienne
1/4 cup spring onions
Pressure cook the soaked barley until soft with sufficient amount of water (takes 5-6 whistles on medium flame). Once cooked just blend it with blender if you don’t like the barley grains. Add more water if required to bring it to right consistency of soup and then bring it to boil once again and now add all the vegetables along with pepper & salt and heat it for 2 to 3 seconds.Now soup is ready to be served with lemon juice and celery.
Note: You can also use barley powder to make soup. Just mix the powder with water bring it to boil and then add veggies. You can also skip blending if u like whole barley.
