1 1/2 Tbsp Olive oil
1 Potato Diced
1 carrot sliced
1 onion chopped
4 to 5 florets of cauliflower
10 French Beans chopped
4 Tomato chopped
Oregano and Salt (As Per Taste )
Freshly Ground Black Pepper (As Per Taste )
Water 3 1/2 bowls of water
In a pan add olive oil, once the oil is hot add onion fry it for two minutes and then add potato let it fry until half cooked and then add rest of the vegetables except tomatoes and fry it for another 5 mins then add salt, pepper and oregano as per your taste and now finally add tomatoes let them fry until they are little soft and then add water.. On medium flame allow it to cook for about 20mins to 30mints approx.. Check the salt and pepper once Again.. You can add more if you feel it’s less..
How to know when it’s cooked
you will get the actual fragrance of the minestrone soup.. And after 20mins water and oil would have got mixed well.
You can always add boiled noodles or macaroni or pasta in order to make it into a one pot meal or a healthy food..
